Okay, I found a few threads on this subject, but nothing quite matched up with my problem. I rooted my phone with this guide:
http://forum.androidcentral.com/optimus-v-rooting-roms-hacks/57485-how-root-lg-optimus-v.html

Then I tried booting my phone to thunderc so I could flash to CM7 via this thread:
Custom Recovery Optimus V - Android Forums

Everything worked fine after flashing thunderc, but I made the mistake of doing a factory reset from my OS instead of doing it in recovery mode. Now when I turn my phone on it just boots to recovery. I backed everything up prior to doing anything and restoring doesn't fix it. Also, I don't know how to flash a different recovery because I no longer can access ADB, it says "error: device is missing." Is there a way to flash to the stock recovery without using ADB? Or am I just screwed and have to buy a new phone?

You can still acess ADB (just won't show as connected).
As I did the same thing about 6 weeks ago.
In a nut shell your going to need to revert back to stock by flashing a stock rom and start from scratch.

Do a search on this site.
Wish I could help more but I'm on my cell and it's a ***** to forward links..

Happy you could find it as I felt bad for not being able to forward the link to the main poster here.

In the ends there should really be a warning sticky in this forum to note to other users to not do stock recover while a custom recovery system are on our rooted phones.
I have read to many posts of others that have done the same thing we did..

The root guide may state this some where but it truly needs to be highlighted in some way!..

There use to be a sticky post that said dont do factory reset with the phone, use cwm to do that. Dunno what happened to it.

If you can get into recovery, you can probably just flash a rom onto the phone again. CM7 wipes data though, but you won't be bricked.

You might get away with flashing a rom that doesn't wipe over it and preserve some data, but odds are slim.

Your best bet is re-flash CM7, which will wipe it out and then restore your backup.
