I have a Samsung Galaxy 2 is it better to move all/most of my apps to my SD Card?

Assuming the card is fast enough, still no. Internal storage is faster than external storage. Many apps won't run even though they can be moved. (The "developer" didn't know to check the app, find out it won't run from the external card and set it so it couldn't be moved.) And it won't speed anything up, it'll slow things down (though probably not enough for you to notice).

About the only way to speed things up is to keep background processes that aren't needed from running (don't have your weather app running constantly - look out the window. Turn off the radios you aren't using. Back out of apps, don't just hit the Home button.) And if you install a kernel that has variable CPU speed, you can overclock the CPU - at the expense of charge time. You'll be charging the battery more often.
