Don't use an open hotspot but one with security, then you define an access password and don't give away the password.

Fingerprint unlock seems to be the mayor cause of problems with 5.1.1 Change it to pattern, password or pin unlock and see if it solves the issues.

In S Note you can write with the S Pen. Then select what you have written using the selection icon (square with dots). Then select transform into, and select the text option.

Go to settings, lock screen, check the option 'action memo on lock screen'. With button of S Pen pressed, double tap, you get your action memo for a quick note.

There is the notification app that shows on the app icon the number of unread notifications. All notifications stay on the watch until you remove them.

It's more complicated: the Tizen wearable framework has severe limitations. I doubt if such an app is possible, it requires a strong integration with the underlying system.

If such an app doesn't exist for Gear S, I can make one. Simple vibration version first, after that extensions. But I'm not interested if there exists a Gear S app with this kind of functionality.

I suggest to do a complete reset of the watch, probably some process is running continuously after the update. On my Gear 2 I had no problems at all.
