AC Question

I'm new to android (Galaxy S5 from iPhone). It seems like when using my bluetooth, I have to enter my security code first. This seems unsafe when I'm driving. With iPhone I just pressed the bluetooth earpiece and spoke a command. This seems unsafe while driving to look down and enter a code. Is there a way to enable the earpiece to initiate the commands?

Yes it is paired, but it says it is car mode, not just a bluetooth headset. I got rid of the car mode, but still need to manually enter the security code (taking my eyes off the road) to use the bluetooth.

Try unpairing and repairing it?

Try a different make headset. The headset could be forgetting the pairing. (It could be a cheap headset or a defective one.)
