Can I use a Vodafone sim in a Verizon phone?

Okay, I already know the answer is "technically, yes... Sort of" but wanted a wee bit of clarification. So am an Irishman living in the US with an iPhone 5 on Verizon. Due for an upgrade in a couple of months, and leaning towards the HTC One M8. (Although if news comes out about the M9...)

Anyways, try to get home every so often, and currently just use a Vodafone Ireland pay as you go Sim in an old RAZR. No, not the Droid, I'm talking the ORIGINAL. Flip phone ahoy.

So question is... How compatible would said HTC be over in Ireland? Obviously GSM would work, but am a wee bit fuzzy on the data coverage. Would I be stuck with slower speeds, or would I have access to Edge?

The phone is capable of:

3G: HSDPA 850/900/1900/2100
CDMA2000 1xEV-DO - for Sprint, Verizon
4G LTE: 700/1700/1800/2100/2300/2600

I have no idea what Vodaphone Ireland uses.
