Set default apps to ask every time

Hey I'm new to android and I know that you can usually get an option when the system needs to know which app to use to open the file or thing and it will say always or just once. I don't have those options and I have to keep resetting the defaults. Help!

Which phone do you have? That is the standard procedure in stock Android although certain phones like the s6/note 5 don't have that option. You can use an app like "better open with" to mimic that functionality

I have the s6 edge plus currently, but earlier, I was shipped the s6 edge regular by accident and it had the options to choose just once or always so that's why I am wondering why I can't do that on my current phone.

Unfortunately this was a change that Samsung did.
