Keyboard symbol issues

I have a galaxy tab A 10.1 and am using the stock Samsung keyboard

Firstly, when I type the letter "i" it doesn't automaticly capitalise.

Secondly and more importantly, when I use a symbol such as inverted commas or brackets, I press the "sym" button to bring up symbols, press the required symbol, then press the "ABC" button to return to letters. Then which ever key I press next gives me another symbol instead of the letter I pressed. For example if I wanted to type hello in brackets I would end up with ((ello).

I know I could install swift key instead but I would prefer to use the Samsung keyboard.

Anyone have any ideas?
 
With the "i" thing, try long pressing on it when the keyboard suggests it and tap "forget". Then type capital "l" and see if that gets remembered in future. Failing that, just type the letter "L" (in lower case it looks like "l".
With the symbol thing, try tap space bar before you tap abc again, that may default back to the keyboard. I haven't used Samsung keyboard for a while so I could be giving you a bum steer...
