I deleted texts with the intent never to see them again. If I never backed them up and deleted them is it still possible to retrieve with some other means?

Yes, it is possible. Is your S8 rooted? Text message recovery, as well as other phone memory data recovery, needs root access. Get your phone rooted, and then try an Android data recovery software. Note that new text messages may overwrite the deleted messages, so do the recovery as soon as possible.

It can be possible. As a general rule, it is very unlikely.

The SMS messages are stored in a SQL database. When a message is deleted, its space is marked as available for overwriting. How soon the space is overwritten will depend on how many text messages you get.

I have downloaded many apps on my computer and they all want my phone to be rooted. I am scared to do so as I've read in a lot of places where it is too easy to screw your phone up. Do you think it's safe?

Yes, you need to root your phone in order to recover data from phone memory. However, it is not as risky as you thought. There are many tips to keep your phone safe after root. Further more, if you don't like rooting, you could unroot it after the recovery with an OTA update or other methods.

Have you called your carrier to see if they have text version of your text messages?

That's because Kingroot has become a vehicle to install adware on your phone.

Try the forum for your carrier's version of the S8 at XDA Forums.
