Android Central Question

My phone was a Galaxy Note 2 - SHG-I317 (AT&T) running Kitkat 4.4.2. I flashed a custom rom - Cyanide Marshmallow 6.0.1 -onto it but I don't like it. The phone is now showing GT-N7105 as the model. Can I go back to Kitkat? How? Also If I decide to can I go to a higher version of the android OS?

Only option would be to either factory reset the phone (not 100% sure that'd restore the original system though once another ROM has been flashed) or, like you already did, flash a ROM based on the Android version you want. Make sure, however, that this ROM matched your model or is known to be compatible, otherwise things might fail or even potentially brick your phone.
