Rooting? Should I? Could I?

Hello AC members!
I own a Samsung Intercept (Running Froyo). I have a couple of complaints with Samsung. For one, they load a whole bunch of junk such as Amazon MP3 on it. (Which I don't need at all. Completely pointless.) I would like to remove it because it takes up space.
Is it possible to remove the OEM junk from my device if I root it?
If so, then what would be the consequences of rooting it?
I hear that it lowers stability and security. I'm not sure if it's worth it if that's the case. Otherwise, I'm certainly willing to root it just so I can remove the OEM apps. I'm running out of space on my device and a lot of apps that I intend on downloading that don't support Apps-2-SD. Any feedback is greatly appreciated!
