Microphone is a hit or miss situation.

Sometimes, my microphone records crystal clear audio, most of the times it records really quiet static where I can only hear my voice when I shout really loud. Though even if I do that, its still very quiet.

I'm on a Red Magic 3 that's running Android 9.

Welcome to Android Central! Check both primary (at the bottom of the phone) and secondary (at the top) mics to make sure the openings aren't blocked (e.g., clogged by lint, or blocked by a poorly fitting case).

They aren't blocked in any way shape or form. Just took a video 5 mins ago and it sounded clear, now it only records quiet static.
