Well, Samsung has the update ready to go as do the wireless companies. However, they are all monitoring forums, online communities, reddit, Facebook, Twitter, and various other social outlets. Verizon said that the update was going to come out today but then they noticed that someone asked when it was going to come out. Just to irk people, they delayed the launch until next week. Each wireless carrier delays the launch by a week whenever they see someone ask the question of "when is Android 5.0 coming out for the S5" or "when will s5 get update for android L." So good job, it's delayed a week because of you. I'm sure someone else is going to ask the very same question today so that the update will be delayed by two weeks. Then someone else will ask it again so the update will be delayed three weeks. At this rate, the update won't come out until September 2025.
OK, that was all a joke. Nobody knows when Android 5.0 is coming out for the S5. Your guess is as good as anyone else's. It is already being released for the S5 in Poland but that's it. Nobody here has any "inside information" as to when it will come out. Besides, the roll out of Android 5.0 isn't going to be worldwide all at once. It all depends on the country you live in, the area of the country you live in, and the wireless carrier your phone is through.
