When I go into Google Maps, I do not see this, nor any menu option to show this. I do have High Accuracy turned on, so where can I see this information? Is the Compass the only way of seeing this information (I do see it there).?

I have an application called GPS test. It shows how many satellites you are receiving. One screen shows latitude and longitude.

I use an app called GPS Status & Tools, which will give you your coordinates as well as a compass.

Additionally, the app seems to fix the tracking on the S7E for other apps such as Google Maps and Scout (This was a problem before I got the app: sometimes my location would be up to half a mile off while I was trying to drive somewhere).
