Only once have I had to get a phone through insurance, but if something happened and my Note broke, would the watch still be able to make and receive calls texts.

My S is a Verizon variant and I do not believe I have a sim card. I do have a separate number for the watch and I have noticed in my settings I can chose which number to use to make calls. I have selected my primary number. I also think I can have calls from my primary number forwarded to my watch through my accounts page or through Verizon customer service if my phone breaks. I ask this question because I have a couple of used phones that I have hanging around in the event my phone breaks, but I would like to give them to kids fo Christmas presents this year. If I know I can use the watch for an emergency then I will not hesitate about giving up the other phones.
Do you pay for the extra line thru Verizon, I think it's $5. If so, that should work.
Yes, I do pay for the extra number. That is great news. I would love to give my old phones up to the kids, as long as their mom says it is ok.
But how would you add phone numbers if you had to?
And I just thought of something, if you ever had to reset the Gear S (if it freezes after a update, or battery declining faster, or for whatever reason as we do sometimes have to reset the S, etc). After you reset the Gear S, you will need a phone to re-connect Gear Manager.
Not trying to deter your great idea, just letting you know why to me the Gear S without a phone is only a temporary fix. Hopefully in the future it won't be temporary. It's a great standalone but it still needs a phone for those small but import things.
