Do you all think the Tab S8 series can handle the AI features of One UI 6.1 or is Samsung playing gatekeeper and will keep them exclusive to the newest devices?

Rumor has it that Samsung is only offering AI to 2023 flagship in hopes that people will upgrade devices for the AI. Good business decision IMO.

I think it could but seems only the Snap Dragon Gen 2 and 3 Will be getting it and probably won't go any older to entice those users to upgrade in my opinion.

Although the Tab s8 series is supposed to get 6.1 UI, it really doesn't appear that the A.I. features will be included from what I've read.
