More background on this than you'd ever need:
EDIT: mods link below does not work in Chrome, I don't know why, the link is correct.
EDIT2: ugh never mind, neither link works. I'll just repost the information here
All credit for this information goes to denshigomi, I'm only reposting it.
Education time!
It all started with a post on facebook:

At this point, the Android Open Source & Compatibility Tech Lead made a comment:

LG Mobile Optimus Facebook Posting
LG released information prematurely regarding the minimum processor upgrade requirements for the LG Optimus. Google recently announced the Gingerbread platform and has not yet published the Gingerbread Compatibility Definition Document (CDD) or the public branch open source code. Once the CDD and the source code is public, LG will evaluate the upgradability of the Optimus Series. We apologize for any confusion or misunderstanding. We will alert you as soon as more information on this topic is available.

Optimus One OS Upgrade
LG will upgrade all Optimus One smartphones currently using the Froyo OS to the next version of the Android OS, Gingerbread. Details of the upgrade schedule will be announced locally in due course. We sincerely apologize for the confusion and misunderstanding that was caused regarding this issue.
Also, LG's Directory of Global Communications said:

So, unless LG goes back on their word, the Optimus V will be getting Gingerbread.
And finally, we go back to facebook for the final piece of information I have on this matter:

Please note that the end of May ETA is not set in stone, and most importantly, it is for the Optimus One phone, not the entire Optimus One line of phones.
In conclusion, the Optimus V will be getting Gingerbread, but there is not yet an ETA for it.
