Well, you can't, because there is no SIM card.

I have the free version of Lookout. If anyone tries to unlock my phone and fails 5 times, it takes a picture of them, gathers gps location, and sends them both to my gmail. I tested it and it works great. Of course, you have to set this up BEFORE the phone gets stolen.
