Apple ear buds mess up phone

So, I have an LG Stylo 3, which I've been using for about 8 months now. I used to have an Apple and another service provider, but I switched. Anyway, I used the ear buds that came with my old phone. But, around May or June, (which is around when I updated my software, coincidentally) they started to mess my phone up. And I'm not talking pausing my music every hour, I'm talking serious mess-up. After about 10 minutes, Google Assistant activates, my music pauses and plays sporadically, and videos/music are skipped. If I'm watching YouTube, it's unbearable.
The strange thing is, when I use my headset or just my phone speakers, it works PERFECTLY FINE. I know I could just buy another pair of headphones, but I'm curious as to why this happens.
