Docs2Go works well enough. I'm sure it'll get an update soon, but yeah, it works for sure.

Pandora is all funky. In landscape mode, the cover art is in the upper left corner and that's it. When I turn it portrait, I get a blank screen. The music plays ok though.
Mint.com app works but its the size that you would probably see on a phone. Everything works other than it not scaling to the screen size.
Angry Birds works great.

I just got mine from Best Buy and only played with it for 5 minutes. Where are all the tablet apps? I saw about 10 to 12 in the Market. Weather Bug, demoed earlier this month at the Honeycomb event, was not one of them. I also saw last week that Dolphin has a tablet browser, and that was not listed in the Tablet Apps section. I also did not see Movies listed there. Are the developers not flagging the apps correctly or are the apps universal for all versions of Android and the UI is dependent on the OS version?
True dat! Apps really are what is going to make or break this thing IMO.

Shortyz Crossword puzzles appears to have been optimized for honeycomb tablets as well... Looks great.

Yeah it's not specifically listed as Tablet specific, but I can't get it to show in the Market on any Android phone. It'll show on the website, but not in the Market app.

I can't get enough of these tablet-optimized apps! I have been emailing the devs all day to get on updating their apps! lol
Geez, that makes 4 market updates since last night. One that told me it was updating the client then 3 that said the market app, inside the market, had an update.
oh dang. I thought Google Body was pre-installed on the device. The review I read must have had a nice demo unit or something.
Hmm, for some odd reason, my market app just keeps saying it is out of date. It isn't updating though. Anyway to force it?
How long have you had your Xoom? If you just got it today just wait a few hours. If not call VZW support.
