I am looking for a 64GB Note 5 & the only ones I seem to be able to find are AT&T unlocked ones.

So can I flash a Stock International Rom on an AT&T device?

I am in UK so it has to work here with a UK Sim Card.

No, you can't flash any firmware to that device due to it's locked bootloader. It will work on some UK networks. Check here WillMyPhoneWork.net - Check if your phone works on a network

I checked that site earlier & it does appear to work on my network.

My main concern is all the bloat & if i'll receive any updates not having an AT&T sim card in the device.

You won't get updates unless you have a valid sim. AT&T firmware is something you will not find anywhere so flashing using Odin is out of the question. If it won't work on your network, it is because of the hardware so you really need a different model for the UK.
