Blue light feature enabled itself?

Does my phone have a poltergeist. I took my Note 8 into the bathroom, took a steaming hot shower, and looked at it and saw what appeared to be a blue light enabled display with its yellow tint. I checked the setting and wondered if I got too much steam, the phone did, or the setting somehow ticked itself. I toyed around for two hours before I gave up and restored from default. Viola, back to normal amoled display. Oddest thing of all time. What happened?

Well considering what you did was beyond the rated capability of the phone to protect itself from water damage, it could be that water got in and triggered it somehow. Just don't be surprised down the road if you try to get it warrantied and you are refused due to water damage. The phone is rated IP67, but that doesn't include rating against steam, hot water or water from a shower (which simulates pressures beyond the rated depth that the phone can achieve safely).
