Does anyone know of a resource for themes and/or boot animations for the Optimus V? And does anyone know how one would apply these to his/her phone? Thanks so much guys.

for bootanimations u can search 320 x 480 bootanimations in xda forums find the 1 u like & apply them using ROMtools by just renaming it to bootanimation then moving the bootanimation.zip u just renamed to the bootanimation folder in ROMtools, open ROMtools press 7 n ROMtools will push the bootanimation to system/media

You can also check out UOT Kitchen, they have quite a few boot animations and easy directions for how to put it on your phone. I recommend it a lot but only because it is so easy and lots of options to work with.

Just go to the pickup page and let it refresh for a while it will automatically put your theme under the yellow bar that says "Your recently cooked files" and you don't have to look for it. I normally submit a theme minimize the pickup page and do some other stuff. I then go back to check when I finally remember, it is always there.

I tried to make some themes, however when I went to flash them onto the phone, I got an error.
I take it you went to the UOT kitchen site for the themes? I too got an error when flashing my first few themes. It turned out that on the upload page on the left side I needed to select the bubble for "Amend scripting" and not the default "Edify scripting" from what I read it had to do with my recovery version.

Hope I'm understanding your problem correctly. The error I got was something like "Error 0".

On my previously rooted Optimus, there was an app that I downloaded that had a ton of animations that you could install. I can't seem to remember the name though.
