I've been running google wallet successfully on my ATT Galaxy s3 for a while now on multiple roms (touchwiz and aosp). You gotta make sure that auto update is off in the play store or else it will update immediately and cause the app not to work. Then use Titanium to detach wallet from the market so that it never tries to update again.
