Is there any way to make the volume or home button the "snap the picture" button? I'm running stock here so I don't think my options all that big but any help or direction appreciated.

Not the home button, but you can get volume buttons to take the shot by installing camera ICS+ from the market.

There are several alternative camers apps. Camera Zoom FX even have a voice activation mode.

You can also use the Bluetooth headset trick. Where you can use the button on a Bluetooth headset as the camera button. Google it if you are unaware of this trick.
