I'm going to root my S3 and flash a ROM, but before I do I want to be sure that in the future I can fully get back to stock. I know I can unroot the phone.. so do I just make a backup (which I don't know how to do) before I flash a ROM, then in the future go back to that ROM and unroot the phone? Will that get me back to where I am right now before the root or is it another process? I appreciate any help.

No back up required. The first thing you would do is run the app Triangle Away. There's a paid (donation) version in the Play store, and if you look around XDA(website) there's a free version available there. This will reset your Custom Flash Counter to ZERO, which indicates to Samsung (or your network provider) how many times you have installed custom ROMs. After running TA, you will need to find a Stock ROM for your carrier, and you would flash this with ODIN. Once you're done, your phone is just like it was when you took it out of the box, the first time.

So since right now my stock ROM is 4.2.1 I'd just find it online and flash like I would a custom one?

You mean 4.1.2? Sprint hasn't rolled out 4.2 for the S3 yet. That's a big difference, could possibly brick your phone if you try to install the wrong rom. And yes you'd just flash it the same way, just like sledge explains above.

Yep I meant 4.1.2. Could you give me a link to that exact ROM? Like you said I'd hate to install the wrong one and I'm really new to all of this.

For questions related to rooting, you're likely to find the answer in the rooting sub-forum of this forum. Anyway, here's everything you need to know about unrooting and returning to stock, assuming you have a Sprint GS3. (If you don't have a Sprint phone, DO NOT follow these instructions. Ask again in the rooting subforum for your specific device.)

And while I'm at it, here's everything you need to know about how to root your SPRINT S3:
