If I wanted to undo s-off, can it be done? Or am I stuck with it once I do it?

Pretty sure it can be undone. I'd start by Googling it but I'm pretty are the answer is on XDA, I just don't have the exact link to it.

Go to HTC website for unlocking and follow the steps to lock the phone again. I just unlocked and rooted this weekend and I saw where it said you could relock the phone.

Relocking is easy...going back to S-On requires some work...not much but some.
