I haven't seen this addressed anywhere and I may be the only one having this issue. I downloaded the Google now launcher for my S6 today. It seems to be installed properly and I see the shortcut for it. If I go into settings and try to set it for the default launcher it's nowhere to be found. I see TouchWiz, action launcher, and Nova but no Google Now. Has anyone else experienced this?

Unfortunately I tried that and it didn't fix it.

Have you tried launching the app from the app drawer? Maybe the system doesn't see it as a launcher yet

Tried that too. It takes me to settings for Nova to clear that as default.

I wonder if it's conflicting with another launcher? Seems like a long shot, but could you try uninstalling all of your additional launchers, then reinstalling Google Now launcher? No clue if that will help, haha, but it probably doesn't hurt to try.

I had this on my first run with Now. Uninstalled/reinstalled and all went fine.
