Change default account?

I'm trying to change the default Android account on my Nexus 6. A little history...

Originally my brother bought this phone for my mother. She proved totally incapable of using modern technology, so I took over the phone and changed it from Verizon to my existing T-Mobile account. I added my Gmail account and usually everything is fine.

However, I've noticed my mother's email address sometimes shows up as the default account. I've looked for a "default account" in Android settings to no avail. For example, I just installed a guitar app called SmartChord, and I'm trying to pay for an add-on within the app. When choosing how to pay for it, my mother's email address is selected by default and I can't change it. I have made sure my email address is selected in the Gmail app, so I'm looking for a default account to change somewhere.

How about just signing out of her account on the phone? You will need her account password to do this.

Settings > Accounts > Google. Remove the "offending" account but you will need the password for that account.

When I go to Settings | Accounts | Google, I see the account, but I don't see a way to remove it.

When you go to Settings, and you select the account, there's no three dots in the upper corner, which gives you a menu saying "remove account"?

There is. It took me a while to figure that out.
