Clock time

Is the 360's current time dependent upon the phone that it is connected with? Or, would it continue to keep correct time without ever being connected to a smartphone?

It keeps time independently, I think.

When I fly, my watch keeps the correct time for the departure time zone through the whole flight. When we land and I turn my phone on, the watch adjusts to the new time zone.
