Can someone explain what different kernels do? Why are some better than others?

You can do a search and find some better explanations, but the gist is this: The kernel is like the engine of your car. In your phone, everything your ROM and apps do that deals with any piece of the hardware, commands have to sent through the kernel. The kernel is the link between the software and the hardware. A really well made kernel can increase your battery life, the speed and fluidity of your system, let you overclock your CPU for more speed, etc.
How does this compare to AOKP? That's what I'm running now, but if this is better--I'll make the jump!
