Data file issues on Lollipop 5.1 - ZTE ZMAX2

I have a ZTE ZMAX2 with Lollipop 5.1. It's a prepaid phone (AT&T) so rooting is not an option.

For 10 months it ran without issues, but for the past two months, it keeps going from buggy to unresponsive to constantly restarting. I have wiped and reset the phone repeatedly. Each time, the phone works fine for a day or two and then starts to get buggy and become unresponsive. Each time the data storage usage on the phone grows incredibly high with no apparent cause..

For example, yesterday I reset the phone yet again and up until this morning it worked fine. Now its getting buggy again, with the keyboard periodically not working and the phone unable to download from the Play store. I just checked the storage on the phone and the data file for YouTube is showing as 4.0GB in size and Media Storage as 1.83GB. I haven't even used the YouTube app since resetting the phone, and I am unable to clear the data file through the Settings/App function. FWIW, the next biggest file is my Amazon Kindle app at 183 MB.

What the heck is going on with Lollipop, and is it possible to fix this problem without rooting the phone?

Any help would be greatly appreciated.
