Is there a way to reset the Google pixel phone data statistics for a specific time or day? Or Anytime ?

when someone dail *#*#4636#*#* code
They don't see the deleted data or the usage ?

I believe you can set the data limit and date from the network tab in settings.

The average person not going know dialer codes to look that information , you have a password/pin/biometric set up then no one can get into your phone
