To correct the issue I installed the Galaxy Tab Email, and now the phone is able to send Exchange Emails normally.
I am a BIG fan if Touchdown!
I can't imagine being an Exchange user without it. Unless things have changed in the new Samsung client, the old one was abysmal.
Do you not like the way it works or the interface? (Or both?)
I'm curious because I actually prefer the native apps over Touchdown, which I use only for Exchange Task syncing.
Don't get me wrong, there's a lot I'd change about them, but I like them better than anything I've used on previous smartphones.

These are just some of the useful features for me personally. There are a bunch of other things in there that others might like as well. The weird font thing was the real deal breaker for me; otherwise I might have lived with it.
- I like the interface better
- When I reply to emails in the stock app, somehow my font gets converted to a size that is so small, the recipient can barely read it.
- Touchdown has an integrated contacts, calendar, notes, and tasks program.
- I can adjust email text size
- I can configure out of office and email rules (including custom notifications based on rule).
- I can backup my settings, so if I do a hard reset or switch phones, I can quickly restore my configuration.
- It does not limit the file types I can specify for attachments (I'm fuzzy on whether the Samsung mail client can do this, but it seems like there was some sort of limitation)
I also use RoadSync since none of the apps support multiple Exchange accounts like the original Droid did :/
