Font / Text Resizing ?

I am currently running a leaked version of ICS on my Bionic and was pleasantly surprised to see that under display settings I was able to make the text size larger or smaller.

Is this an available option on the GS3?

Yep and you can also change the font from the default. The S3 comes with a couple of different fonts and you can also install any of the flip fonts.
