Galaxy Note 8 automatically pauses Youtube videos

Everytime I plug in my headphones and watch youtube videos the phone seems to stop the video at random times for no reason, or call Bixby. It's not buffering or anything. I don't have any fingers on the middle of the screen, so it's not me accidently clicking it.
This only happens when I use headphones. I've tried using other headphones but it keeps happening. It happens both when I use wifi and data. It only happens on the youtube app.

Anyone know how to fix this? It's been driving me nuts for months now.
 
Does the 2-bar pause symbol change into the right arrow play symbol, or does the video just stop for a while?

Try going to Settings -> Device Maintenance -> Battery -> Unmonitored apps
Add YouTube to the list.
