Obviously the gear s2 doesn't have gps in the non 3g version. My question is: if I am connected to my phone while running will I be able to see distance and pace on the watch while running a route being plotted on the s health (or any other mapping apps like MMR) or does it only show steps and heart rate and such?

As long as you're connected to your phone, I don't see no reason why it shouldn't. Also in their description Nike+, Maps & Navigation are listed as some of the features of the Non 3G/4G version

I'm more a bicycler than a runner, but I use an S2 classic with my phone in my handlebar bag, and after manually starting tracking in S Health on the watch, you can see your distance, calories, pace, speed, heart rate, and duration (and you can control your music). When I'm done, SHealth provides a map of the route I took, detailed graphs of speed and heart rate, duration and distance, and a list of avg. and max speed, pace, elevation, and more (e.g., wind speed, temperature). So yeah, with watch+phone, it works pretty well. (Folks seem generally more happy with SHealth than with the Nike running app.)

You can monitor your distance or time or speed, with or without your phone connected. But speed and distance i think are just estimates without your phone. With your phone connected S-health can tap into your GPS. Not sure if you can plot an exact course beforehand. I always just go for walks and measure my time.

Here's some screenshots of my S-health walks. The green circles are what's being displayed on my watch during my walking exercises (twist bezel to switch). And then there's some screenshots of what's logged on the watch and phone.
