I've noticed in the last few days that my Gmail is constantly trying to sync. I go into the app and do a force stop.....but after a while it just shows up again in the notifications.

Anyone else have this?

Samsung S20 5G on OneUI3. 0

Not experiencing it , but might want do clear data then force stop.

is this the Gmail app, or your stock Email app trying to sync your Gmail account?

Seems to be happening after I try and send a file to my office printer from a particular Scanner app (CamScanner)

Only really started happening after the update to 3.0

That's odd -- I wonder why those would be connected? Does it actually interfere with Gmail's function, or can you send and receive emails normally during this time?

I seem to be able to use Gmail normally while this is happening.

When it happens, I have to go to the APPS and do a force stop on Gmail.

Let it go for a while, and see if it affects your battery at all. If not, I'd just leave it alone (but also send feedback to Google from within Gmail's settings).

After my update to A11 One UI 3.0 I had issues with syncing my email. For me, I had to go into my email app and turn auto sync back on. Not sure if it was the system update or One UI but they actually caused the settings in the app to change. Looking at my Account page in the phone settings everything looked OK, all saying sync, but in the actual app the settings for sync had been disabled.

You may also want to check your sleeping apps. Not necessarily for this issue but because you're having this issue perhaps your having the other issue as well. I feel like they are connected. Anyway, Settings>Battery and device care>Battery>Background usage limits>Sleeping apps and Deep sleeping apps. Check this list for any apps that you aren't noticing notifications from regularly.
