Gmail or Inbox?

My daily driver is a Metro PCS LG Optimus f6 with Xperion ROM v3 installed. I'd like to further slim down my phone by removing apps I don't use or that I don't need two or three of.

For example, I don't need the stock email app and the Gmail app, too. But I think I'd rather have Inbox than either of them.

Would I be missing any functionality by removing either or both of these system apps?

The only thing that annoyed me with Inbox was the inability to use my email signature. I went back to the Gmail app because of that.

I didn't really like Inbox when I tried it. It just felt like the email categorization that I preferred wasn't clear. I actually hope that Google doesn't decide to phase out Gmail in favor of Inbox.
