Gave it a try no go!try uninstalling and reinstalling... you can't fully uninstall it but you can reset it to the factory version.
Probably my next move in the morning when it's fully charged.it's a bit of a pain but you could try resetting the Watch... I do a smart switch backup first through the wearable app.
I'm also having problems with assistant although it does work, it won't let me set alarms it says the alarm has been set for then the alarm isn't actually turned on.
Wiped my watch and it worked as it should Google assistant is now installed.

Would you mind seeing if setting an alarm with assistant works? It tells me the alarm is set, and looks to create the alarm, but doesn't turn it on.

Can you uninstall it?
I've never used, nor have any intention of ever using, these voice assistants... I just don't see any use for them for ME.
So, if it's even eating any battery at all by being installed, I'd like to get rid of it.
