Personally, I like to adjust this to 6 apps... Nova, and Action launcher have this capability... but yet most stock launchers don't let you do that.
Correct. In fact with Nexus launcher, for some reason, I have noticed that since I have my Google now cards widget on my home screen, if I go to click in one of my cards and it takes me to the actual Google now page, at the top, it doesn't say not updated for an hour, or no internet connection available. Maybe it's just me, but still.. as for the dock bar yes I like having these 5 apps there. Less icons on the home screen itself.

I've used Nova for ages but not on my Nexus 6p. I've really been enjoying the back to basics feel. Does anyone know if the Nexus launcher will be the default when Nougat is official on other Nexus devices apart from the rumoured HTC models?

For the Nexus launcher to be fully functional it has to be installed as a system app which if I'm not mistaken requires root access. I gave it a go (I'm using stock N DP5) but there isn't really anything that necessarily makes it better than Google Now launcher besides the date.
Furthermore, I personally prefer the appearance of the Google search bar compared to the new look.

TL;DR I'm using the Google Now launcher.

My main gripe with the google now launcher was the inability to change the size of the darn icons. This is my only reason to use Nova (and has been since my Nexus 5). Is there an option to make the app icons smaller in the new nexus launcher without rooting?

You can change your dpi with adb.
