After the One UI Pie update now my apps won't update! What shall I do?
I'm on AT&T. I had the same problem. I was connected to wifi and it still said pending. I switched to data and that didnt work either.
SOLUTION: I went to Apps in settings and cleared data for Google Play Store. I then went back to Play Store and I had to update to latest GP app. Then I was able to restore my apps.
I hope this helps you.

I have this problem with the Play store not updating apps and I am still on Oreo. I have fiddled with some settings, even got Google on the phone. Now, some will auto update and some still don't. I am going to try your fix.
Did you have to sign back into all your apps?
