Is there any way to use it only for offline and locally? It seems to require me to be logged in, synced, and backed up to Drive. I don't need/want those unnecessary features.
 
I'm able to use it offline -- it just gives me a warning at first that files won't be synced until there's a connection. But I was able to create a new Sheet while my wi-fi and mobile data were off.
 
Is there a way to eliminate syncing and auto backup? When I deleted it from Drive it deletes the local copy as well.
 
Hmm, that's a good question. You can try designating the file as Offline on your phone's Sheets app.
