Hands free note taking in Google Keep - how?

I got a question about using my Android phone hands free. When I'm driving, I often get some idea of a note I need to take. So, I end up risking my life half looking at the road and half trying to type something into Google Keep!

Two things I would like to know are:

a) Can I have a simple way to voice activate Google Keep to open a note so I can then voice dictate it?

b) Is there a way to have a single button on my home screen where I press it and it opens a Google Keep note with voice dictation already activated?

Are you using Android Auto? Not sure if you can use AA to ask Google assistant to make a note in Google keep. You could ask Google assistant to send a text to yourself. If there is something I want to remember while driving, I send a text to myself using Google assistant... "Hey Google, text ..." Google asks what's the message and I just rattle off what I want to remember.

In many countries it is illegal to use a mobile phone whilst driving. Please be careful not to hurt yourself or someone else.
