Having trouble swiping away Google Now cards in KitKat? Here's the easy fix.

I was going crazy because swiping cards from right to left would return me to my home screen and I was initially thinking Google had effed up. Nope, we just have to swipe left to right now.

I'm not to enthused about the forced layout of the home screens now - I like having my home screen in the middle and don't really want to have to install a launcher to get that back. Options, please!

I don't have the Nexus 5, but what happens when you are on your home screen and hit the home button?

I don't understand the question? If you're on your main home screen, you stay there; if you're on one of the additional screens to the right, you return to the leftmost screen.

That's what was throwing me; you return to the first home screen with a right-to-left swipe. From your base home screen, a left-to-right swipe takes you into Google Now. If you pay attention, when you do the old swipe up from the home button which used to invoke Google Now, it doesn't appear from the bottom, but instead whips you to the left where GN lives now. I don't know what's going to happen with alternate launcher.

I am not sure if all phones do what mine can. When I am on the home screen an press home, I can edit my home screens.

Yeah, you can shuffle screens around, but the leftmost one is dedicated to the "Home" home screen with Google Now to the left of it. The KitKat manual explicitly says so.
