How do I remove or change the "home" on the GALAXY S7 EDGE always on screen?

I don't think that you can remove home, but you can remove San Jose which is in the same time zone

Try going into AOD settings (under display settings), go into clock style, scroll to the dual time zone clock style and there should be a tiny gear icon on the bottom right. You can add/remove cities in here.

The problem is that HOME is not MY home and the time is wrong in relation to Mexico.
