on PCs I was able to identify and block applications from calling home by making enteries in the hosts file e.g. redirect X to 127.0.0.1. Is there a simple way to identify ports and IPs apps use and block off any unwanted traffic on Android?

The first problem most people have is that the android hosts file cannot be edited without rooting the phone.
