Not always, unless you have a custom recovery (Like TWRP. Although if you had this why would you take an OTA update? Just flash your own updates.). But you would want to enable survival mode in SuperSU to get root back after updating.

Very interesting. At this point I don't intend to install a custom ROM, but may do so later.
I want to root in order to get access to more customization options and apps that require root

If I root, then can I just manually install android updates? Actually I prefer doing it this way instead of OTA anyway
