How can I remove my wife’s contacts which synced to my phone after using find my phone, so Pixel 2 contacts somehow copied to Galaxy S7 after using find my phone

Did she log in to her Google account on your phone? If so, she may still be logged in. Go to accounts and remove her account. That will also remove all the data associated with her account.
