How can we stop any updates?

How can we stop any (Carrier OTA) updates from being push to a phone or stop an update from the nagging update screen? I post this 6 months to late but am looking for the future. Mostly on non rooted phones, any kind of phone not just S2's.

The only way I've seen this happening is on rooted phones. I root all my devices and haven't seen an update message in I don't know how long.

I think it is rooting and then disabling system update, but not completely sure about that one.
