How do I disable voice to text?

I have a Samsung Galaxy S5 and I want to disable voice to text. I have a microphone button on my keyboard in messages and I want the default option to be smileys. I have to long press the microphone button to have the option to choose smileys but it does not remember this preference and I can't find an option in settings to turn off the voice to text.
